- 8 canned apricot halves
- 4 Tbsp. apricot juice
- 4 Tbsp. cider vinegar
- 4 tsp. sugar
- 3 tsp. cornstarch
- 2 tsp. catsup
- 1/4 tsp. ginger
- dash of salt
- 8 oz. cooked, diced chicken
- 1 c. diced green pepper
- 1 tomato
- 1 c. brown rice, cooked
Method
- Set aside apricots.
- Combine juice and next 6 ingredients. Cook over medium heat 5 minutes.
- Add green pepper and chicken, cooking briefly until done.
- Don't overcook the green peppers, then add the apricots at the last and tomato chunks for color. Serve over cooked brown rice.
- Serves 2.
