Ingredients

  • 8 canned apricot halves
  • 4 Tbsp. apricot juice
  • 4 Tbsp. cider vinegar
  • 4 tsp. sugar
  • 3 tsp. cornstarch
  • 2 tsp. catsup
  • 1/4 tsp. ginger
  • dash of salt
  • 8 oz. cooked, diced chicken
  • 1 c. diced green pepper
  • 1 tomato
  • 1 c. brown rice, cooked

Method

  • Set aside apricots.
  • Combine juice and next 6 ingredients. Cook over medium heat 5 minutes.
  • Add green pepper and chicken, cooking briefly until done.
  • Don't overcook the green peppers, then add the apricots at the last and tomato chunks for color. Serve over cooked brown rice.
  • Serves 2.
