Ingredients

  • 1 small yellow onion, diced
  • 1 lb mushroom, sliced
  • 1 tablespoon thyme, fresh, chopped
  • 14 tablespoon rosemary, fresh, chopped
  • 1 12 lbs apples, Honey Crisp, core, diced
  • 14 tablespoon lemon zest, grated
  • 1 tablespoon fresh lemon juice
  • 12 teaspoon kosher salt
  • 12 teaspoon black pepper
  • 12 lb prune, PITTED, diced 1/4-inch

Method

  • Coat a non stick pan with non-stick spray and place over a medium high heat.
  • Add onion and saute for 2 minutes until translucent.
  • Add mushrooms, thyme and rosemary, saute for 3 minutes.
  • Add remaining ingredients, cook only until the apples are just tender.
