Ingredients
- 1 small yellow onion, diced
- 1 lb mushroom, sliced
- 1 tablespoon thyme, fresh, chopped
- 14 tablespoon rosemary, fresh, chopped
- 1 12 lbs apples, Honey Crisp, core, diced
- 14 tablespoon lemon zest, grated
- 1 tablespoon fresh lemon juice
- 12 teaspoon kosher salt
- 12 teaspoon black pepper
- 12 lb prune, PITTED, diced 1/4-inch
Method
- Coat a non stick pan with non-stick spray and place over a medium high heat.
- Add onion and saute for 2 minutes until translucent.
- Add mushrooms, thyme and rosemary, saute for 3 minutes.
- Add remaining ingredients, cook only until the apples are just tender.
