Ingredients

  • 4-6 Spicy Italian Sausage (I use the spicy sausage, but you can use sweet/mild)
  • 1 cup grated Parmesan Cheese (or more to your liking)
  • 4-6 Granny Smith Apples chopped (I like the tartness)
  • 1 1/2 cups walnuts - coarsely chopped
  • 2 loaves of day old bread (cut into cubes or just pulled apart into medium size pieces)
  • 1 cup butter
  • 1-2 Tbsp. ground sage leaves
  • 2-3 Tsp. ground thyme">thyme or thyme">thyme leaves
  • 2 1/2 cups celery, diced
  • 1 1/4 cups onion, diced
  • 1-2 cans chicken stock (use just enough to moisten)
  • 1 1/2 Tsp. ground black pepper
  • 1 Tsp. Salt
  • 1/3 cup parsley- fresh - chopped

Method

  • In a large skillet saute the sausage until lightly browned, breaking up the sausage into bite size pieces.
  • Remove the sausage from the skillet, drain drippings.
  • Place the drained sausage into a large bowl.
  • In the same skillet over medium heat, melt butter.
  • Add sage, thyme, celery and onions.
  • Saute for 5-7 minutes until onion is tender.
  • Remove from heat and stir in salt, pepper, Parmesan cheese and parsley.
  • Mix well.
  • Add bread, walnuts and apples to the sausage, then stir in the sausage mixture.
  • Mix well.
  • Add chicken stock to the mixture to moisten.
  • Mix well.
  • Place the stuffing in a greased 3-4 qt, greased (butter) baking dish.
  • Cover and bake at 350 degrees for 25 minutes.
  • Uncover and bake an additional 10-15 minutes until lightly browned.
  • May also be stuffed in 18-22 lb.Turkey.
