Ingredients

  • 1 prebaked (9-inch) shell
  • 1 Tbsp. butter
  • 3 large cooking apples, peeled, cored and coarsely chopped
  • 1 tsp. vanilla
  • 1/4 to 1/2 c. sugar
  • 3 eggs, slightly beaten
  • 1 c. heavy cream

Method

  • Melt butter in pot.
  • Add apples and vanilla and cover.
  • Cook until soft, but not mushy on moderate heat, shaking pan occasionally.
  • Remove from heat and stir in sugar, adding more if needed.
  • Place apple filling in the pie shell.
  • Blend the beaten eggs with the cream and pour over the apples.
  • Bake at 375° for about 25 minutes or until custard is just set.
  • Serve warm or at room temperature.
  • Serves 6.
