Ingredients

  • 3 Tbsp. Butter
  • 4 x Large eggs
  • 1 c. Lowfat milk
  • 1 c. Flour
  • 1/2 tsp Salt TOPPING
  • 1 lb Tart apples
  • 4 Tbsp. Sugar
  • 1/4 tsp Grated nutmeg
  • 1/4 tsp Grnd cinnamon

Method

  • Heat butter in 12 frying pan in 450 degree oven.
  • In blender mix together Large eggs, lowfat milk, flour & salt till smooth.
  • Pour batter into Warm pan.
  • Return to oven & bake About 10 min.
  • Pancake will puff up & get large bubbles.
  • Pierce with a fork.
  • While pancake is baking, heat 2 Tbsp.
  • butter in frying pan over medium-high heat.
  • Add in apples & saute/fry till soft add in sugar, nutmeg & cinnamon.
  • Saute/fry about 4 min.
  • When pancake is cooked, remove from oven.
  • Spoon apple topping over center.
  • Slice into wedges to serve.
  • Either sprinkle on maple syrup or possibly sugar & serve with lemon wedges to squeeze over slices.
  • Approximately 15-18 min.
