Ingredients

  • 1/4 c. nonfat dry milk
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1 1/4 c. whole wheat flour
  • 1 Tbsp. honey
  • 1 Tbsp. oil
  • 2 egg whites
  • 1/2 c. water
  • 1 tsp. vanilla
  • 1/2 c. apples, grated
  • 1/2 c. carrots, grated

Method

  • In a bowl mix all dry ingredients, in another bowl mix remaining ingredients except apple and carrot.
  • To the dry ingredients add liquids and mix; fold in apples and carrots.
  • Line a 12 muffin tin with paper muffin liners or spray with Pam.
  • Fill cups half full.
  • Bake at 400° for 25 minutes or until golden brown.
