Ingredients
- 2 cups Wholemeal Or Whole Wheat Self Raising Flour
- 1/2 cups Almond Meal (ground Almonds)
- 1/2 cups Sugar
- 2 teaspoons Ground Cinnamon
- 1/3 cups Olive Oil
- 1 cup Milk
- 2 whole Eggs
- 1/2 cups Applesauce
- 2 whole Red Apples, Cored And Finely Sliced
Method
- Set out paper cases in muffin tin.
- Preheat oven to 180C (350F).
- Mix the dry ingredients together.
- Add the wet ingredients and mix until just combined.
- Put 1/4 cup of batter into each paper muffin case.
- Push a couple of apple slices into the batter.
- Sprinkle with demerara sugar if you want.
- Bake for 20 minutes.
- Can be frozen. I pop them into the kids' lunchboxes still frozen and they are thawed by snack time.
