Ingredients

  • 2 cups Wholemeal Or Whole Wheat Self Raising Flour
  • 1/2 cups Almond Meal (ground Almonds)
  • 1/2 cups Sugar
  • 2 teaspoons Ground Cinnamon
  • 1/3 cups Olive Oil
  • 1 cup Milk
  • 2 whole Eggs
  • 1/2 cups Applesauce
  • 2 whole Red Apples, Cored And Finely Sliced

Method

  • Set out paper cases in muffin tin.
  • Preheat oven to 180C (350F).
  • Mix the dry ingredients together.
  • Add the wet ingredients and mix until just combined.
  • Put 1/4 cup of batter into each paper muffin case.
  • Push a couple of apple slices into the batter.
  • Sprinkle with demerara sugar if you want.
  • Bake for 20 minutes.
  • Can be frozen. I pop them into the kids' lunchboxes still frozen and they are thawed by snack time.
