Ingredients

  • 2 cups Flour
  • 1/2 cups Brown Sugar
  • 1/2 cups Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/8 teaspoons Salt
  • 1/2 cups Shortening
  • 3/4 cups Water

Method

  • **Note: For those who wish a truly dense cake, increase the shortening by 1/8 cup and only add water until the dough is between cookie and muffin-type density.
  • Preheat oven to 350° Fahrenheit.
  • In mixing bowl, combine flour, sugars, baking powder and salt. Mix until ingredients are evenly distributed.
  • Add shortening and cut in until mixture is crumbly. Stir in water gradually until dough is thinner than cookie dough, but thicker than cake batter - about like muffin batter or just a bit thicker. (This may use more or less water depending on altitude, weather, etc., of course.)
  • Spread mixture into greased 9-inch round cake pan. Sprinkle top with cinnamon sugar.
  • Bake at 350° for 20-25 minutes or until pick inserted in center comes out clean.
