Ingredients
- 1/2 cup loosely packed fresh basil leaves
- 1/4 cup loosely packed fresh parsley leaves
- 4 scallions, green parts only, coarsely chopped
- 1/4 cup finely grated Parmesan
- 2 oil-packed anchovy fillets, drained
- 1/2 cup mayonnaise
- Freshly ground black pepper
Method
- In a food processor, pulse the basil, parsley and scallions until finely chopped.
- Add the cheese and anchovies and process to a paste consistency.
- Add the mayonnaise and puree until smooth.
- Season with pepper.
