Ingredients
- 1 gal. zucchini, cut and peeled
- 1 gal. water
- 1 c. slacked lime
- 10 c. sugar
- 6 c. white vinegar
- 3 Tbsp. pickling spice
Method
- In a large canner container, add zucchini, water and lime. Soak, weighted down, overnight. Drain and wash well.
- Cover with clean water. Let stand for 2
- hours and drain.
