Ingredients

  • 1 c. plus 2 Tbsp. butter, divided
  • 1/4 c. sugar
  • 1/4 c. cocoa
  • 1 tsp. vanilla
  • 1 egg, beaten
  • 1 c. coconut
  • 2 c. crushed graham crackers
  • 1/2 c. nuts
  • 3 Tbsp. milk
  • 2 Tbsp. instant vanilla pudding mix
  • 2 c. powdered sugar
  • 1 c. chocolate chips

Method

  • Combine 1/2 cup butter, sugar, cocoa and vanilla in double boiler and cook until blended.
  • Add egg and cook 5 minutes longer, stirring constantly.
  • Remove from heat and add coconut, graham crackers and nuts.
  • Pat into buttered 9 x 13-inch cookie pan. Spread with mixture of 1/2 cup soft butter, milk, pudding mix and powdered sugar.
  • Cool in refrigerator.
  • Melt chocolate chips and 2 tablespoons butter.
  • Spread on 2nd layer.
  • Cut in squares and store in refrigerator.
