Ingredients

  • 10 c. ground, unpared zucchini
  • 4 c. ground onions
  • 5 Tbsp. salt
  • 2 1/4 c. white vinegar
  • 4 1/2 c. sugar
  • 1 Tbsp. nutmeg
  • 1 Tbsp. dry mustard
  • 1 Tbsp. turmeric
  • 1 Tbsp. cornstarch
  • 1/2 tsp. pepper
  • 2 tsp. celery salt
  • 1 green pepper, chopped
  • 1 red pepper, chopped

Method

  • Combine zucchini, onions and salt; mix well.
  • Let set overnight.
  • Drain.
  • Rinse with cold water; drain again.
  • Combine drained vegetables, vinegar, sugar, spices, cornstarch and pepper; mix well.
  • Bring to boiling; lower heat and simmer (uncovered) for 30 minutes or until desired consistency.
  • Stir occasionally.
  • Seal in jars.
  • Process in boiling water bath for 5 minutes.
  • Makes 6 to 8 pints.
