- 10 c. ground, unpared zucchini
- 4 c. ground onions
- 5 Tbsp. salt
- 2 1/4 c. white vinegar
- 4 1/2 c. sugar
- 1 Tbsp. nutmeg
- 1 Tbsp. dry mustard
- 1 Tbsp. turmeric
- 1 Tbsp. cornstarch
- 1/2 tsp. pepper
- 2 tsp. celery salt
- 1 green pepper, chopped
- 1 red pepper, chopped
Method
- Combine zucchini, onions and salt; mix well.
- Let set overnight.
- Drain.
- Rinse with cold water; drain again.
- Combine drained vegetables, vinegar, sugar, spices, cornstarch and pepper; mix well.
- Bring to boiling; lower heat and simmer (uncovered) for 30 minutes or until desired consistency.
- Stir occasionally.
- Seal in jars.
- Process in boiling water bath for 5 minutes.
- Makes 6 to 8 pints.
