Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 clove garlic, crushed
- 1 small red pepper (capsicum), cut into short strips
- 90 g (3 oz) green beans
- 60 g (2 oz) button mushrooms, sliced
- 1 tablespoon balsamic vinegar
- 440 g (14 oz) canned mixed beans
- chopped fresh parsley, for serving
Method
1. Heat half the oil in a medium pan. Add the onions and cook for 2 minutes over medium heat. Add the garlic, red pepper, green beans, mushrooms and vinegar. Cook for another 5 minutes, stirring occasionally.
2. Thoroughly rinse and drain the mixed beans. Add to the vegetables with the remaining oil and stir until just warmed through. Sprinkle with chopped parsley for serving.
