Ingredients
- 1 (1 lb.) pkg. black-eyed peas
- 2 lb. bulk pork sausage
- 1 onion, chopped
- 1 (28 oz.) can tomatoes
- 1/2 c. water
- 2 Tbsp. sugar
- 2 1/2 Tbsp. chili powder
- 2 1/2 Tbsp. chopped celery
- 1 chopped jalapeno pepper (optional)
Method
- Sort, wash and soak peas overnight.
- Brown sausage.
- Add onion; cook until tender.
- Drain.
- Drain peas well; stir in sausage and remaining ingredients.
- Bring to a boil.
- Cover, reduce heat and simmer for 1 1/2 hours.
- Add more water if necessary.
