Ingredients

  • 1 (1 lb.) pkg. black-eyed peas
  • 2 lb. bulk pork sausage
  • 1 onion, chopped
  • 1 (28 oz.) can tomatoes
  • 1/2 c. water
  • 2 Tbsp. sugar
  • 2 1/2 Tbsp. chili powder
  • 2 1/2 Tbsp. chopped celery
  • 1 chopped jalapeno pepper (optional)

Method

  • Sort, wash and soak peas overnight.
  • Brown sausage.
  • Add onion; cook until tender.
  • Drain.
  • Drain peas well; stir in sausage and remaining ingredients.
  • Bring to a boil.
  • Cover, reduce heat and simmer for 1 1/2 hours.
  • Add more water if necessary.
