- 12 c. shredded zucchini
- 4 c. diced onions
- 5 Tbsp. salt
- 2 1/2 c. vinegar
- 6 c. sugar
- 1 Tbsp. dry mustard
- 3/4 Tbsp. cornstarch
- 3/4 tsp. nutmeg
- 3/4 tsp. turmeric
- 1 1/2 tsp. celery seed
- 1/2 tsp. pepper
- 1 red pepper, diced
- 1 green pepper, diced
Method
- Mix zucchini, onions and salt; let set overnight.
- Rinse and drain in the morning.
- Add the remaining ingredients and mix well. Cook for 30 minutes.
- Pour into jars and seal.
