Ingredients
- zucchini (about 3 gal.)
- 2 c. slacked lime
- 2 gal. water
- 2 qt. vinegar
- 9 c. sugar
- 1 Tbsp. pickling spice
- 1 tsp. green coloring
Method
- Peel and chunk the zucchini.
- Mix with the lime and water. Let stand 24 hours.
- Stir twice a day. Drain and rinse in cold water. Let stand in cold water 12 hours.
- Heat the vinegar, sugar, pickling spice and coloring.
- Let stand 12 hours.
- Cook 35 minutes.
- Put into hot pint jars and seal.
