Ingredients
- 1 Tbsp. olive oil
- 2 to 3 sprigs fresh parsley, chopped
- 1 medium onion, cut into rings
- 1/2 c. tomato sauce
- 1 Tbsp. red cooking wine
- salt and pepper to taste
- 1/4 tsp. dried basil or 1 sprig fresh, chopped
- 1 medium zucchini
- Parmesan cheese, grated
Method
- In olive oil, saute lightly parsley and onion.
- Add tomato sauce, cooking wine, salt, pepper and basil.
- Simmer 3 to 4 minutes.
- Add zucchini, which has been sliced into thin rounds. Simmer 15 to 20 minutes.
- Sprinkle with grated cheese and serve.
