Ingredients

  • 1 Tbsp. olive oil
  • 2 to 3 sprigs fresh parsley, chopped
  • 1 medium onion, cut into rings
  • 1/2 c. tomato sauce
  • 1 Tbsp. red cooking wine
  • salt and pepper to taste
  • 1/4 tsp. dried basil or 1 sprig fresh, chopped
  • 1 medium zucchini
  • Parmesan cheese, grated

Method

  • In olive oil, saute lightly parsley and onion.
  • Add tomato sauce, cooking wine, salt, pepper and basil.
  • Simmer 3 to 4 minutes.
  • Add zucchini, which has been sliced into thin rounds. Simmer 15 to 20 minutes.
  • Sprinkle with grated cheese and serve.
