Ingredients
- 1 c. flour
- 3/4 c. sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. cooking oil
- 1 egg
- 1/2 c. low-fat milk
- 1/8 tsp. almond extract
- 1/2 Tbsp. poppy seed
Method
- Grease 10 to 12 muffin cups.
- Combine flour, sugar, baking powder and salt; set aside.
- In second bowl, beat oil, egg, milk and almond extract until smooth.
- Add to dry ingredients and mix until only moistened.
- Stir in poppy seed.
- Spoon into muffin cups.
- Bake 30 minutes at 350°, until golden brown.
