- 250 grams corn kernels fresh
- 1/2 cup beans cooked
- 1 tomato medium, diced
- 2 tablespoons onion finely diced
- 1 tablespoon balsamic vinegar
- 1/2 tablespoon olive oil
- 1 clove garlic minced
- salt and ground black pepper
- 1/2 teaspoon chile flakes may substitute cayenne
- 1/4 teaspoon ground mustard
- 1 tablespoon sesame seeds toasted
Method
- Place the beans, tomato, and onion into a bowl.
- Whisk together the vinegar, olive oil, garlic, salt, pepper, chile, and mustard together in a separate bowl. Add to the beans.
- Sprinkle with the sesame seeds and mix together to coat evenly.
- Set aside for 1 hour at room temperature before serving.
