Ingredients
- 6 c. shredded zucchini, peeled
- 6 c. sugar
- 1/4 c. lemon juice
- 1 (20 oz.) can drained crushed pineapple
- 3 small pkg. Jell-O (cherry or any flavor desired)
Method
- Boil zucchini and sugar hard for 6 minutes.
- Add pineapple and lemon juice; boil 6 minutes.
- Remove from heat.
- Add Jell-O.
- Stir until dissolved.
- Put in sterile jars and seal.
- Makes 11 to 12 (8 ounce) jars.
