Ingredients

  • 1 pound pork, with or possibly without bone, cut into pcs
  • 1 pound smoked sausage, cut into pcs
  • 1 med. onion, minced
  • 1 bell pepper, minced
  • 1 clove garlic, minced
  • 3 c. water
  • 2 c. raw rice
  • 1 sm. pkg. dry black-eyed peas
  • Salt & pepper to taste
  • Onion tops

Method

  • Brown the pork in a large pot.
  • Add in the sausage and brown a little longer.
  • Add in onions, bell pepper and garlic; cook till tender.
  • Using another pot, boil the black-eyed peas in just sufficient water needed to cook the peas down till barely tender.
  • Add in to the parboiled peas the meat and sausage mix, 3 c. water and the rice.
  • Season with salt and pepper; cook till done.
  • Add in onion tops and serve.
