Ingredients
- 1 pound pork, with or possibly without bone, cut into pcs
- 1 pound smoked sausage, cut into pcs
- 1 med. onion, minced
- 1 bell pepper, minced
- 1 clove garlic, minced
- 3 c. water
- 2 c. raw rice
- 1 sm. pkg. dry black-eyed peas
- Salt & pepper to taste
- Onion tops
Method
- Brown the pork in a large pot.
- Add in the sausage and brown a little longer.
- Add in onions, bell pepper and garlic; cook till tender.
- Using another pot, boil the black-eyed peas in just sufficient water needed to cook the peas down till barely tender.
- Add in to the parboiled peas the meat and sausage mix, 3 c. water and the rice.
- Season with salt and pepper; cook till done.
- Add in onion tops and serve.
