Ingredients
- 5 c. peeled, sliced zucchini
- 3/4 c. water
- 1/2 c. sugar
- 1/4 c. lemon juice
- 1 tsp. cinnamon
- 1 c. brown sugar
- 1 c. flour
- 1 tsp. baking powder
- 6 Tbsp. butter or oleo
Method
- Combine zucchini, water, sugar, lemon juice and cinnamon; boil 10 minutes.
- Put in a 9-inch pie tin or 8 x 8-inch cake pan. Combine brown sugar, flour, baking powder and butter or oleo.
- Put on top of mixture in pan.
- Bake at 350° for 30 minutes.
