Ingredients

  • oleo
  • 1 medium zucchini
  • 1 medium yellow squash
  • 2 medium onions
  • 1 Tbsp. water
  • 4 oz. tomato sauce
  • 24 Ritz crackers
  • 2 Tbsp. oleo
  • 1 1/2 tsp. curry powder

Method

  • Slice squash and onions into a casserole dish.
  • Dot with oleo and add water to prevent sticking.
  • Bake, covered, until tender. Mix Ritz cracker crumbs, tomato sauce, melted oleo and curry powder.
  • Spoon on top of squash.
  • Poke into the squash a little so some stays on top.
  • Cook until bubbling and brown.
