Ingredients

  • 1 lb. sausage
  • 2 c. zucchini, shredded
  • 1 large onion, diced
  • 1 can mushrooms
  • 1 pkg. peas (frozen)
  • salt and pepper to taste
  • 2 c. shredded cheese
  • 6 to 8 eggs, beaten

Method

  • Brown sausage and onion together in a large electric skillet. Add zucchini and simmer for 3 minutes. Add mushrooms, peas and salt and pepper.
  • Pour eggs on top of mixture. Stir together.
  • Let cook for 3 to 5 minutes, then with spatula, turn over.
  • When it is all turned, spread cheese over top and put lid on.
  • Cook until set and cheese is melted.
