Ingredients
- 1 lb. sausage
- 2 c. zucchini, shredded
- 1 large onion, diced
- 1 can mushrooms
- 1 pkg. peas (frozen)
- salt and pepper to taste
- 2 c. shredded cheese
- 6 to 8 eggs, beaten
Method
- Brown sausage and onion together in a large electric skillet. Add zucchini and simmer for 3 minutes. Add mushrooms, peas and salt and pepper.
- Pour eggs on top of mixture. Stir together.
- Let cook for 3 to 5 minutes, then with spatula, turn over.
- When it is all turned, spread cheese over top and put lid on.
- Cook until set and cheese is melted.
