Ingredients
- 4 medium zucchini, sliced thin
- 1/2 c. chopped onion
- 6 Tbsp. butter, divided
- 2 1/2 c. herbed stuffing
- 1 can cream of chicken soup
- 1/2 c. sour cream
Method
- Cook zucchini in boiling water until tender; drain.
- Saute onions in half the butter until tender.
- Remove from heat.
- Mix 1 1/2 cups stuffing, onions, soup and sour cream; stir in the zucchini.
- Place in 1 1/2-quart casserole.
- Mix remaining stuffing and melted butter.
- Toss gently over top of casserole and bake at 350° for 40 minutes.
