Ingredients

  • 4 medium zucchini, sliced thin
  • 1/2 c. chopped onion
  • 6 Tbsp. butter, divided
  • 2 1/2 c. herbed stuffing
  • 1 can cream of chicken soup
  • 1/2 c. sour cream

Method

  • Cook zucchini in boiling water until tender; drain.
  • Saute onions in half the butter until tender.
  • Remove from heat.
  • Mix 1 1/2 cups stuffing, onions, soup and sour cream; stir in the zucchini.
  • Place in 1 1/2-quart casserole.
  • Mix remaining stuffing and melted butter.
  • Toss gently over top of casserole and bake at 350° for 40 minutes.
