Ingredients
- 1/2 c. melted butter
- 2 good-sized summer squash or zucchini
- 1 c. sour cream
- 1 c. seasoned bread crumbs
- 1 c. cream of chicken soup
- 1 c. grated carrots
Method
- Mix butter and bread crumbs.
- Sprinkle half on bottom of pan. Cook sliced squash 5 to 10 minutes.
- Mix soup, carrots and sour cream.
- Place layer of squash over buttered bread crumbs and then the soup mixture.
- Alternate layers.
- Sprinkle top with remaining bread crumb mixture.
- Bake at 350° for about 30 minutes.
