Ingredients

  • 1/2 c. melted butter
  • 2 good-sized summer squash or zucchini
  • 1 c. sour cream
  • 1 c. seasoned bread crumbs
  • 1 c. cream of chicken soup
  • 1 c. grated carrots

Method

  • Mix butter and bread crumbs.
  • Sprinkle half on bottom of pan. Cook sliced squash 5 to 10 minutes.
  • Mix soup, carrots and sour cream.
  • Place layer of squash over buttered bread crumbs and then the soup mixture.
  • Alternate layers.
  • Sprinkle top with remaining bread crumb mixture.
  • Bake at 350° for about 30 minutes.
