Ingredients

  • 30 g softened low-fat butter or margarine
  • 20 g stevia sugar
  • 1/2 None vanilla pod, scored lengthwise, seeds scraped
  • 25 g dried cherries, roughly chopped
  • 250 g low-fat cottage cheese
  • 1 None egg
  • 150 g apple sauce
  • 60 g semolina
  • 30 g flaked almonds

Method

  • Preheat oven to 350°F. Grease a 9 x 5 inch pan. Cream butter and stevia until light and fluffy. Mix together the vanilla seeds or extract with the cherries, cottage cheese, egg, apple sauce and semolina. Mix into the creamed butter mixture.
  • Sprinkle three-quarters of the sliced almonds into the baking pan. Pour the cake mixture into the pan, smooth the surface and sprinkle with remaining almonds. Bake for 40 mins, covering with foil after 30 mins.
  • Leave to cool in the pan for 30 mins. Carefully remove from the pan and place on a wire rack to cool for another 30 mins. Cut cheesecake into seven pieces.
