Ingredients
- 4 medium zucchini, diced
- 1/4 c. carrots, shredded
- 1/2 c. onions, chopped
- 6 Tbsp. margarine
- 2 1/4 c. herb stuffing mix
- 1 can cream of chicken soup
- 1 c. sour cream
Method
- Cook zucchini in small amount of salted water; drain.
- Cook carrots and onions until tender.
- Stir in 1 1/2 cups stuffing mix, soup and sour cream.
- Gently fold in zucchini and 3 tablespoons margarine.
- Pour into a greased casserole.
