Ingredients

  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 1 Tbsp. vanilla
  • 2 c. grated zucchini, peeled and seeds removed
  • 3 c. flour
  • 1 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. grated lemon rind or 1 tsp. juice
  • 1 c. finely chopped pecans (optional)

Method

  • Beat eggs until light and frothy.
  • Add sugar, oil and vanilla. Mix until thick.
  • Add zucchini.
  • Mix.
  • Add remaining ingredients. Mix until smooth.
  • Bake in 2 greased and floured loaf pans at 350° for 1 hour.
  • Freezes well.
