Ingredients

  • 2 c. sugar
  • 3 eggs
  • 1 c. oil
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. or more grated zucchini
  • 1 c. nut meats
  • 1 tsp. vanilla
  • 3 c. and 1 Tbsp. plain flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • raisins (optional)

Method

  • Chop nuts.
  • Beat eggs; add sugar and oil.
  • Combine dry ingredients.
  • Add to first mixture with zucchini.
  • Stir in raisins, nuts and vanilla.
  • Put in 2 greased and lightly floured loaf pans.
  • Bake in lowest rack at 350° for 60 minutes.
  • Let stand 10 minutes and turn out on wire rack.
  • Glaze with powdered sugar mixed with a little cream.
  • This recipe freezes well.
