Ingredients

  • 1 eggplant
  • sliced Provolone cheese
  • fresh basil
  • marinara or spaghetti sauce
  • olive oil

Method

  • Trim skin off eggplant.
  • Slice into rounds 1-inch thick. Liberally oil cookie sheet with olive oil.
  • Place eggplant on cookie sheet and bake in a 375° oven approximately 7 to 10 minutes.
  • Remove cookie sheet and top each eggplant round with 2 tablespoons of marinara sauce.
  • Return to oven for 5 minutes. Remove cookie sheet, top each round with 1 or 2 fresh basil leaves and sliced Provolone cheese (approximately 1 ounce each).
  • Turn off oven.
  • Return to oven until cheese is melted.
