Ingredients
- 1 eggplant
- sliced Provolone cheese
- fresh basil
- marinara or spaghetti sauce
- olive oil
Method
- Trim skin off eggplant.
- Slice into rounds 1-inch thick. Liberally oil cookie sheet with olive oil.
- Place eggplant on cookie sheet and bake in a 375° oven approximately 7 to 10 minutes.
- Remove cookie sheet and top each eggplant round with 2 tablespoons of marinara sauce.
- Return to oven for 5 minutes. Remove cookie sheet, top each round with 1 or 2 fresh basil leaves and sliced Provolone cheese (approximately 1 ounce each).
- Turn off oven.
- Return to oven until cheese is melted.
