Ingredients

  • 1 1/2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 c. grated or peeled zucchini
  • 2 eggs
  • 1 c. sugar
  • 1/2 c. oil
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts

Method

  • Sift dry ingredients.
  • Set aside.
  • Beat eggs; add sugar, oil and vanilla.
  • Beat thoroughly.
  • Stir in zucchini.
  • Add flour mixture.
  • Don't overbeat.
  • Fold in chopped nuts (and raisins, if desired).
  • Pour into a greased loaf pan.
  • Bake at 350° for 55 to 60 minutes.
  • Cool before removing from pan.
  • Can also add chocolate chips to batter.
