- 4 c. shredded zucchini (3 medium)
- 1 1/2 c. Bisquick
- 1/2 c. chopped onion
- 1/2 c. Parmesan cheese
- 1/2 Tbsp. oregano
- 1 heaping Tbsp. parsley
- 1 clove garlic, chopped
- 1/3 c. vegetable oil
- 4 beaten eggs
- 1/4 tsp. salt
- dash of pepper
- 1/2 c. chopped mushrooms
- 2 c. shredded Swiss cheese
Method
- Mix together and spread in a well-greased 9 x 13-inch pan. Bake at 350° for 55 minutes or until light brown.
- Let sit a few minutes before serving.
- Freezes well.
