Ingredients
- 3 to 7 lb. standing rib roast
- salt and pepper
Method
- Rub the roast with salt and pepper.
- Place fat side up in a shallow pan and roast in a preheated oven at 375° for 1 hour.
- Turn off the heat, but do not open the oven door.
- No matter how long it is until dinner time, don't open door or remove roast.
- Turn it on to 375° again 30 to 40 minutes before serving time.
- Does not matter about the size of roast.
