- 2 c. zucchini sliced
- 1 medium onion, sliced
- 3 Tbsp. margarine
- 1/2 c. Minute rice
- 2 c. yellow squash, sliced
- 2 (16 oz.) cans stewed tomatoes, drained slightly, save juice
- 3/4 tsp. garlic salt
- 1/2 tsp. pepper
- 1/4 c. saved tomato juice
- 8 oz. shredded Mozzarella
- 2 tsp. Parmesan cheese
Method
- Preheat oven to 350°.
- Place zucchini in a 9 x 13-inch dish, top with onion.
- Sprinkle uncooked rice over the onion.
- Cut 1 tablespoon margarine into pieces and dot over casserole; top with yellow squash.
- Add tomatoes, spices and juice.
- Dot with 2 tablespoons margarine.
- Cover tightly with foil and bake 50 minutes.
- Remove from oven, remove foil, top with cheeses and bake an additional 5 to 10 minutes, until cheese is melted.
