Ingredients

  • 2 c. zucchini sliced
  • 1 medium onion, sliced
  • 3 Tbsp. margarine
  • 1/2 c. Minute rice
  • 2 c. yellow squash, sliced
  • 2 (16 oz.) cans stewed tomatoes, drained slightly, save juice
  • 3/4 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1/4 c. saved tomato juice
  • 8 oz. shredded Mozzarella
  • 2 tsp. Parmesan cheese

Method

  • Preheat oven to 350°.
  • Place zucchini in a 9 x 13-inch dish, top with onion.
  • Sprinkle uncooked rice over the onion.
  • Cut 1 tablespoon margarine into pieces and dot over casserole; top with yellow squash.
  • Add tomatoes, spices and juice.
  • Dot with 2 tablespoons margarine.
  • Cover tightly with foil and bake 50 minutes.
  • Remove from oven, remove foil, top with cheeses and bake an additional 5 to 10 minutes, until cheese is melted.
