Ingredients

  • 3 cups Cooked Orzo Pasta
  • 1 whole Red Pepper
  • 1 whole Yellow Pepper
  • 1/2 cups Diced Purple Onion
  • 1 whole Seeded And Diced Large Tomato
  • 1/2 cups Chopped Fresh Parsley
  • 3 Tablespoons Italian Salad Dressing
  • 1/2 cups Extra Virgin Olive Oil
  • 1/2 cups Red Wine Vinegar
  • 1 Tablespoon Lemon Juice, Freshly Squeezed

Method

  • Cook orzo per package instructions. Drain, and rinse in cold water; set aside. Dice peppers, onions and tomato into nice small pieces. Pour vegetables and parsley on top of the orzo pasta.
  • In a bowl, combine your favorite Italian salad dressing, olive oil, red wine vinegar, and lemon juice and whisk together. Pour over the pasta and mix all the ingredients together well. Allow to chill in the refrigerator for a minimum of 1 hour before serving.
