Ingredients
- 1 (14 1/2 ounce) stewed tomatoes, undrained
- 2 cups frozen whole kernel corn
- 1 cup canned black beans, rinsed and drained
- 1 (4 1/2 ounce) canchopped green chilies, drained
- 1 teaspoon oregano
- 2 teaspoons chili powder
- 14 teaspoon cumin
- salt and pepper
- hot cooked rice
Method
- In a saucepan, combine tomatoes, corn, beans, chiles, oregano, chili powder, cumin, salt, and pepper.
- Cook over medium heat for 6-8 minutes or until corn is tender, stirring occasionally.
- Serve over hot cooked rice.
