Ingredients

  • 1 (14 1/2 ounce) stewed tomatoes, undrained
  • 2 cups frozen whole kernel corn
  • 1 cup canned black beans, rinsed and drained
  • 1 (4 1/2 ounce) canchopped green chilies, drained
  • 1 teaspoon oregano
  • 2 teaspoons chili powder
  • 14 teaspoon cumin
  • salt and pepper
  • hot cooked rice

Method

  • In a saucepan, combine tomatoes, corn, beans, chiles, oregano, chili powder, cumin, salt, and pepper.
  • Cook over medium heat for 6-8 minutes or until corn is tender, stirring occasionally.
  • Serve over hot cooked rice.
