Ingredients
- 6 large carrots (about 1 1/4 lb.)
- 2 Tbsp. onion, finely chopped
- 2 Tbsp. prepared horseradish
- 1/2 c. mayonnaise
- salt and pepper
- 1/4 c. bread crumbs
- 2 Tbsp. butter, melted
Method
- Cut carrots, julienne style.
- Cook until tender (about 6 to 8 minutes).
- Drain carrots, reserving 1/4 cup liquid.
- Turn carrots into a 1 1/2-quart baking dish.
- In small bowl, combine onion, horseradish, mayonnaise, reserved liquid from carrots and salt and pepper to taste.
- Pour over carrots, spreading evenly.
- Toss bread crumbs with butter; sprinkle over top.
- Bake 15 minutes at 375°. Makes 6 servings.
