Ingredients

  • 6 large carrots (about 1 1/4 lb.)
  • 2 Tbsp. onion, finely chopped
  • 2 Tbsp. prepared horseradish
  • 1/2 c. mayonnaise
  • salt and pepper
  • 1/4 c. bread crumbs
  • 2 Tbsp. butter, melted

Method

  • Cut carrots, julienne style.
  • Cook until tender (about 6 to 8 minutes).
  • Drain carrots, reserving 1/4 cup liquid.
  • Turn carrots into a 1 1/2-quart baking dish.
  • In small bowl, combine onion, horseradish, mayonnaise, reserved liquid from carrots and salt and pepper to taste.
  • Pour over carrots, spreading evenly.
  • Toss bread crumbs with butter; sprinkle over top.
  • Bake 15 minutes at 375°. Makes 6 servings.
