Ingredients

  • 4 c. potatoes, peeled, sliced and boiled tender
  • 1 (16 oz.) carton of sour cream
  • 6 slices of bacon, fried & crumbled
  • 1 small onion, chopped
  • 1 1/2 c. grated cheddar cheese
  • margarine
  • a little milk
  • salt and pepper

Method

  • Prepare potatoes like you were going to make mashed potatoes. Drain well when done; add sour cream, bacon, onion, a little margarine and a little milk.
  • Stir in salt and pepper to taste; mash well.
  • A few little lumps won't hurt.
  • Pour into baking dish and top with cheese.
  • Bake at 350° for 30 minutes, or until cheese is melted and bubbly.
