Ingredients
- 1/2 c. salad oil
- 1 eggplant, peeled and cubed
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 2 tomatoes, peeled and cut into eighths
- 1 can tomato paste
- lemon juice (use 1 lemon and squeeze for juice)
- salt
Method
- Put all of above ingredients into a saucepan and simmer 15 minutes.
- Add

- to
- taste.
- Serve with lemon wedges or spoon over
- fluffy steamed rice; add an extra squeeze of lemon juice.
