- 1 c. all-purpose flour
- 3 c. whole wheat flour
- 3 tsp. sugar
- 1 1/2 tsp. salt
- 2 1/4 tsp. double acting baking powder
- 1 1/2 tsp. baking soda
- 3 eggs
- 3 c. buttermilk
- 3 Tbsp. butter, softened
- 1 ripe banana, mashed
Method
- Beat 3 eggs until light.
- Add 3 cups buttermilk, 3 tablespoons butter and ripe banana.
- Combine the dry ingredients with the liquid ingredients.
- Cook on medium hot griddle.
- Makes 24 medium pancakes.
- Freeze extras for easy, healthy breakfast, lunch or snacks.
