Ingredients

  • 1 c. all-purpose flour
  • 3 c. whole wheat flour
  • 3 tsp. sugar
  • 1 1/2 tsp. salt
  • 2 1/4 tsp. double acting baking powder
  • 1 1/2 tsp. baking soda
  • 3 eggs
  • 3 c. buttermilk
  • 3 Tbsp. butter, softened
  • 1 ripe banana, mashed

Method

  • Beat 3 eggs until light.
  • Add 3 cups buttermilk, 3 tablespoons butter and ripe banana.
  • Combine the dry ingredients with the liquid ingredients.
  • Cook on medium hot griddle.
  • Makes 24 medium pancakes.
  • Freeze extras for easy, healthy breakfast, lunch or snacks.
