Ingredients

  • 3 yellow summer squash (about 1 1/4 lb.)
  • 1/4 c. olive oil
  • 2 whole cloves garlic, peeled and left whole
  • salt and fresh ground pepper to taste
  • 1 tsp. dried oregano
  • 1/4 c. freshly grated Parmesan cheese

Method

  • Trim off ends of squash and cut into thin rounds, about 6 cups.
  • Heat oil in large, heavy skillet.
  • Add squash, shaking skillet and redistributing squash rounds.
  • Add garlic, salt and pepper and cook over high heat about 4 minutes.
  • Sprinkle with oregano and toss to blend.
  • Remove garlic.
