Ingredients
- 3 yellow summer squash (about 1 1/4 lb.)
- 1/4 c. olive oil
- 2 whole cloves garlic, peeled and left whole
- salt and fresh ground pepper to taste
- 1 tsp. dried oregano
- 1/4 c. freshly grated Parmesan cheese
Method
- Trim off ends of squash and cut into thin rounds, about 6 cups.
- Heat oil in large, heavy skillet.
- Add squash, shaking skillet and redistributing squash rounds.
- Add garlic, salt and pepper and cook over high heat about 4 minutes.
- Sprinkle with oregano and toss to blend.
- Remove garlic.
