- 1 (8 oz.) pkg. cream cheese
- 1 egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1 (6 oz.) pkg. semi-sweet chocolate chips
- 1/2 tsp. salt
- 1 1/2 c. flour
- 1 c. sugar
- 1/4 c. unsweetened cocoa
- 1 tsp. baking soda
- 1 c. water
- 1/3 c. oil
- 1 Tbsp. white vinegar
- 1 tsp. vanilla
Method
- In small bowl, beat first 4 ingredients until creamy, then add chocolate chips.
- In large bowl, sift dry ingredients.
- Add water, oil, vinegar and vanilla.
- Mix well.
- Spray miniature cupcake tins with nonstick spray (Pam) and line with miniature paper cups. Spray cups.
- Fill halfway with chocolate batter.
- Put a heaping teaspoon of cream cheese mixture into center.
- Bake in 350° oven for 30 to 35 minutes.
- Yield: 36.
