Ingredients

  • 1 (8 oz.) pkg. cream cheese
  • 1 egg
  • 1/3 c. sugar
  • 1/8 tsp. salt
  • 1 (6 oz.) pkg. semi-sweet chocolate chips
  • 1/2 tsp. salt
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1/4 c. unsweetened cocoa
  • 1 tsp. baking soda
  • 1 c. water
  • 1/3 c. oil
  • 1 Tbsp. white vinegar
  • 1 tsp. vanilla

Method

  • In small bowl, beat first 4 ingredients until creamy, then add chocolate chips.
  • In large bowl, sift dry ingredients.
  • Add water, oil, vinegar and vanilla.
  • Mix well.
  • Spray miniature cupcake tins with nonstick spray (Pam) and line with miniature paper cups. Spray cups.
  • Fill halfway with chocolate batter.
  • Put a heaping teaspoon of cream cheese mixture into center.
  • Bake in 350° oven for 30 to 35 minutes.
  • Yield: 36.
