Ingredients
- 1 c. egg yolks (scant)
- 1/2 c. boiling water
- 1 c. sugar, sifted
- 1 1/2 c. cake flour, sifted 4 times
- 1/2 tsp. vanilla
- 1/2 tsp. lemon extract
- 2 tsp. baking powder
Method
- Beat egg yolks and hot water and salt until stiff with an electric beater.
- Beat egg white pouring water so they won't cook. Add sugar slowly and 1/2 teaspoon vanilla and 1/2 teaspoon lemon extract.
- Add flour slowly.
- Continue beating; add baking powder last.
- Bake as an angel food.
- Slow for 1 hour.
- Don't make the pan over half full or it will run over.
