Ingredients

  • 1 c. egg yolks (scant)
  • 1/2 c. boiling water
  • 1 c. sugar, sifted
  • 1 1/2 c. cake flour, sifted 4 times
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 2 tsp. baking powder

Method

  • Beat egg yolks and hot water and salt until stiff with an electric beater.
  • Beat egg white pouring water so they won't cook. Add sugar slowly and 1/2 teaspoon vanilla and 1/2 teaspoon lemon extract.
  • Add flour slowly.
  • Continue beating; add baking powder last.
  • Bake as an angel food.
  • Slow for 1 hour.
  • Don't make the pan over half full or it will run over.
