- 2 dozen hard-boiled eggs, coarsely chopped
- 1 small red onion, chopped
- 2 stalks celery, finely chopped
- 1/3 cup black olives, chopped
- 1/3 cup green pepper, finely chopped
- 1/4 cup fresh chives, finely chopped (can sub green onion tops)
- 1 tablespoon cider vinegar
- 3/4 cup mayonnaise
- 1 teaspoon salt
- 1 tablespoon black pepper (or to taste)
- 1 tablespoon Worcestershire sauce
- 1/4 - 1/3 cup prepared mustard
- 1/2 cup chopped dill pickles or 1/2 cup sweet pickle
- 1 teaspoon cayenne
- 1 tablespoon lemon juice
- 1 tablespoon chopped capers
- 1 teaspoon paprika
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- 2 tablespoons prepared horseradish
- 1 tablespoon hot sauce
Method
- Mix together all ingredients except the eggs in a large mixing bowl and taste for seasoning.
