Ingredients

  • 3/4 c. Great Northern beans
  • 2 1/2 c. water
  • 1/2 can beef, rinsed
  • 1/2 c. onion, chopped
  • 1 can tomatoes
  • 3 1/2 c. water
  • 1 tsp. oregano
  • 1/4 tsp. garlic powder
  • 1/4 tsp. pepper
  • 2 bay leaves
  • 1/2 c. macaroni, uncooked
  • 1/2 can corn
  • 1/2 can green beans
  • 1/2 can carrots

Method

  • Bring water to a boil, add beans and boil for 2 minutes. Remove from heat, cover and soak 1 hour or overnight in refrigerator.
  • Cook beef and onion in hot frying pan until beef is warmed.
  • Stir beef mixture into beans.
  • Bring bean mixture to a boil.
  • Reduce heat, cover and boil gently until beans are tender (1 to 1 1/2 hours).
  • Break up large pieces of tomatoes.
  • Add tomatoes and remaining ingredients, except macaroni, to bean mixture.
