Ingredients
- 4 slices thick bacon, cut into 1/4-inch pieces
- 1 1/2 lb. lean beef (sirloin tip or round), cut into 1/2-inch pieces
- 2 cloves finely chopped garlic
- 1 to 2 cans beer
- 2 c. beef bouillon
- 2 Tbsp. ground cumin
- 2 Tbsp. dried, crushed mint or 4 Tbsp. chopped fresh
- 2 to 3 medium unpeeled potatoes
- 2 to 3 carrots
- 2 to 3 stalks celery
- 4 to 5 small onions, turnips or rutabagas
Method
- In a large, heavy pot saute bacon and drain grease.
- Add garlic and beef and brown.
- Add bouillon, beer, onion, mint, cumin and pepper; bring to a boil, then simmer 1 to 1 1/2 hours until meat is done (remove the onion).
- Thicken with flour and water.
