Ingredients
- 7 cups boiling water, divided 3-3-1
- 1 cup wild rice
- 3 cups sliced mushrooms
- 1/2 cup onion, chopped
- 1/2 cup butter
- 1 cup old cheddar cheese
- 19 ounces diced tomatoes
- 1 teaspoon salt
Method
- Add 1 cup of rice to 3 cups boiling water. Boil for 5 minutes. Remove from heat and let it sit for 1 hour. Drain.
- Add rice to 3 cups boiling water. Cover and simmer for 30 minutes. Drain and place rice in casserole dish.
- In fry pan, saute mushrooms and onion in butter for 5 minutes. Add to rice.
- Add cheese, tomatoes, salt and water to rice mixture.
- Bake at 350* for 1 hour.
