Ingredients
- 2 c. apples, quartered
- 1 c. raisins
- 1 c. bread crumbs
- 1 c. apple juice
- 2 wild ducks, dressed
- 1 slice onion
- 2 tsp. salt
- 1/4 tsp. pepper
Method
- Mix apples, raisins and breadcrumbs; add apple juice until moist.
- Fill the ducks with this stuffing.
- Rub the ducks with onion, salt and pepper.
- Roast at 325°, breast down, for 2 1/2 to 3 hours.
- Baste frequently with remaining apple juice.
