Ingredients
- 2 medium zucchini
- 1/2 c. chopped onion
- 3 Tbsp. butter
- 1/2 tomato, seeded and diced
- 1/2 tsp. oregano
- 1/8 tsp. pepper
- 1 Tbsp. chopped parsley
- 2 c. Grape-Nuts flakes
- 1/2 c. shredded Cheddar cheese
Method
- Cut zucchini in half lengthwise.
- Scoop out centers.
- Dice pulp and reserve.
- Cook zucchini boats for 3 minutes.
